About this Recipe
These cookie bites are inspired by my partner who loves oatmeal cookies as well as any chocolate dessert – so I thought, why not both? The only chocolate I’d ever seen in oatmeal cookies was chocolate chips, and I knew I could take that one step further by creating a cocoa batter. This recipe is certainly a winner with him!

Ingredients
Double Chocolate Chip Oatmeal Bites
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 tsp vanilla extract
- 1 egg
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup rolled oats
- 1 cup semisweet chocolate chips
These bites are both super delicious and super easy to make! This dough doesn’t need to be chilled, you can form the balls to put on the cookie tray and bake as soon as you’ve finished mixing all the ingredients together. These cookie bites will not spread out when baking, so keep this in mind when you’re forming them to go into the oven.
Some Pro Tips:
Don’t worry if the batter seems like it’s too dry at first – once you start mixing, you’ll see how nicely it comes together to form a smooth homogeneous mixture.
I recommend using parchment paper on a baking sheet when making cookies. While you can certainly grease the baking sheet with butter or margarine instead, I find that parchment paper reduces the risk of burning the bottom of the cookies and ensures you can easily remove them from the tray. You can even reuse the parchment paper for a second batch!

Step by Step Instructions
Step 1
Preheat the oven to 325°F. Line a baking sheet with parchment paper.
Step 2
Whisk together the granulated sugar, brown sugar, and melted butter until a paste is formed and there are no lumps.
Step 3
Whisk in the egg and vanilla, ensuring both are evenly mixed into the batter.
Step 4
In a separate bowl, mix together the flour, cocoa powder, baking soda, salt, and oats.
Step 5
Add the bowl of dry ingredients to the wet batter, and mix using a whisk.
Pro Tip: It’s ideal to use a whisk to mix this batter, unlike other cookie batters, as mixing more will result in more cake-like cookies due to the activation of the gluten. You want this for these particular cookie bites!
Step 6
Add the chocolate chips and fold them into the batter using a spatula.
Pro Tip: I like adding the chocolate chips in last and folding them into the batter using a spatula as I find this gives the most even distribution of chocolate chips.
Step 7
Using either an ice cream scoop or a spoon, scoop up the dough and form balls about 4cm (1.5 inches) in diameter. Evenly place the cookie bites on the parchment-lined baking sheet.
Pro Tip: Since these bites don’t spread when baking, you don’t need to worry about leaving a specific amount of space between each one – though this isn’t to say that you want to overcrowd your baking sheet! By evenly spreading out your cookies, you ensure a more even bake. You can also make the cookies bites smaller if you like, which you can see in the below photo.
Step 8
Bake the bites for 12-13 minutes.
Pro Tip: The exact time will depend on your oven. It’s better to start with less time and check frequently afterwards, adding a minute or two as necessary than to put too much time at the beginning and burn the cookies. Since these are dark due to the cocoa, you won’t see them brown as an indication that they are done. The tops of the bites will harden and the cookie will lighten in colour slightly from the raw batter, indicating they are finished baking.
Step 9
Cool the bites before serving.
Pro Tip: Wait a few minutes after you take the bites out of the oven before transferring them to a cooling rack. Since they will be very soft when first removed from the oven, it’s best to let them cool (and thus harden) slightly before moving them or they may break apart.
